Chili Chicken

Ingredients:
1 lb. boneless chicken 1/2 medium onion, sliced
breasts
3 green onions (or 1 inch fresh ginger, chopped
scallions), sliced (or 1 1/2 Tbsp. ginger
powder)
3-4 chili peppers, sliced 3 Tbsp sweet basil
(serano or jalapeno)
1 Tbsp sugar 2 Tbsp Fish Sauce (see end
of post)
3 cloves garlic, chopped/ oil
crushed
Instructions:
Heat oil in large skillet or wok. add garlic; brown on high
heat. Cut chicken into bite-size pieces; cook until all
pink is gone. Add fish sauce, onions and ginger. Stir-fry
until edges of onions are clear. Add basil and sugar; stir-
fry 5 min. Add green onions and chilies; stir-fry 5 min. or
until green onions are tender. Add water or more fish sauce
if it get too dry or for a sauce. Serve over rice.
Comments:
A couple of notes. It's the fish sauce that makes this dish
and you'll probably have to go to an Oriental store to get
it. Make sure you get the stuff WITHOUT salt; the other
stuff is for Kim-chee and wouldn't work. Second, the
peppers are optional for those of you who don't like hot
food. I prefer serano chilies instead of jalapeno; do what
you want. (And it's Oh so good!!!)
